Resumen
La presente investigación aborda aspectos relacionados con la educación nutricional
desde las diferentes asignaturas de las carreras de educación infantil, cuyo objetivo se
relaciona con desarrollar actividades educativas que contribuyan a la educación nutricional
desde el currículo de la carrera de Educación Primaria del Centro Universitario Municipal
de Taguasco, con el enfoque de formar motivaciones y modos de actuación sobre la
producción y consumo de alimentos sobre bases agroecológicas coherente con sus
principios, desde la dimensión educación y el desarrollo social personal. En el desarrollo
de la investigación se emplearon los métodos: analítico-sintético, el inductivo-deductivo,
así como el análisis documental. Dentro de las técnicas se aplicaron la entrevista y la
observación participante, para constatar su implicación en las tareas orientadas. Las
actividades educativas realizadas contribuyeron a la formación de nuevos valores y hábitos
en la producción y consumo de alimentos en los alumnos de esta carrera, así como la
articulación con proyectos e instituciones de la localidad.
Abstract
The present investigation approaches aspects related with the nutritional education from
the different subjects of the careers of infantile education whose objective is related with
developing educational activities that contribute to the nutritional education from the

curriculum of the career of Primary Education of the Municipal University Center of
Taguasco, with the focus of forming motivations and performance ways on the production
and consumption of foods on you base coherent agroecology with its principles, from the
dimension education and the personal social development. In the development of the
investigation the methods were used: analytic-synthetic, the inductive-deductive one, as
well as the documental analysis. Inside the techniques the interview and the participant
observation were applied, to verify their implication in the guided tasks. The carried out
educational activities contributed to the formation of new values and habits in the
production and consumption of foods in the students of this career, as well as the
articulation with projects and institutions of the town.
