ALI-007. Osmodeshidratación de frutos de naranja (Citrus. Sinensis L. Osbeck) por métodos artesanales

El presente trabajo se realizó en el Laboratorio de Microbiología perteneciente a la Facultad de Ciencias Agropecuarias enclavada en la Universidad de Ciego de Ávila “Máximo Gómez Báez”. El material de estudio fue naranja dulce (Citrus sinensis. L.) de la variedad Navel perteneciente a la Empresa Agroindustrial Ceballos. Se desarrollaron un total de 4 experimentos con el objetivo de proponer una metodología de deshidratación de naranja por métodos sostenibles. En el desarrollo del trabajo se obtuvo como resultados que en el proceso de Osmodeshidratación el mejor comportamiento lo obtuvo en las Rodajas tratadas con jarabe de sacarosa a 50°Brix. Se realizó un análisis sensorial a las rodajas de naranja donde la sacarosa a 50°Brix fue la que mayor índice de aceptación obtuvo (9) estadísticamente aceptable teniendo mayor aceptación por la mayoría de los panelistas. Posteriormente fueron llevadas las rodajas de naranja de 50°Brix al proceso de secado donde se comparó el método del secador solar y al sol directo, obteniendo el secador solar los mejores valores de deshidratación en comparación con sol directo. Se pudo apreciar que los métodos de deshidratación empleados lograron reducir el número de bacterias y hongos en las rodajas de naranja. La metodología propuesta de naranja osmodeshidratada y secado mediante un secador solar confirma que es factible introducirlo en el proceso productivo de industria y mini-industria como una alternativa para situaciones excepcionales. Para la realización de los análisis estadísticos se utilizó el procesador estadístico SPSS versión 23.

The present work was carried out in the Microbiology Laboratory belonging to the Faculty of Agricultural Sciences located at the University of Ciego de Ávila "Máximo Gómez Báez". The study material was sweet orange (Citrus sinensis. L.) of the Navel variety belonging to the Ceballos Agroindustrial Company. A total of 4 experiments were carried out with the objective of proposing a methodology for dehydration of orange by sustainable methods. In the development of the work, the results were obtained that in the osmodehydration process the best performance was obtained in the slices treated with sucrose syrup at 50 ° Brix. A sensory analysis was carried out on the orange slices where sucrose at 50 ° Brix was the one that obtained the highest acceptance rate (9) statistically acceptable, having the highest acceptance by most of the panelists. Subsequently, the 50 ° Brix orange slices were taken to the drying process where the solar dryer method and direct sun were compared, the solar dryer obtaining the best dehydration values compared to direct sun. It was seen that the dehydration methods used were able to reduce the number of bacteria and fungi in the orange slices. The proposed methodology for osmodehydrated and dried orange using a solar dryer confirms that it is feasible to introduce it into the production process of industry and mini-industry as an alternative for exceptional situations. The statistical processor SPSS version 23 was used to carry out the statistical analyzes.
